This week I tried something out that I can't believe I never did...I spatchcocked a chicken! It's a more fun way of saying that you "butterflied" it. Holy shit! I will never cook a chicken any other way and am going to push that my family let me spatchcock the turkey for Thanksgiving.
Here's it going into the oven with a rub I made with lots of garlic, onion powder, paprika, herbs and some truffle salt.
Here it is out of the oven...I need to take a food photography class BIG TIME. Skin was so crispy though!
Here's my lil plate. This was honestly the best, juciest and most flavorful chicken I have ever had. Thats roasted spaghetti squash on the side that I sauteed with onions, mushroom and spinach with a little bit of greek yogurt and feta and basil. That was so so good. And of course the vino to wash it down! :)
