Move Over Pioneer Woman...There's A New Food Blogger In Town!

Recently I have had a few salads with kale and quinoa with fresh herbs at restaurants and they have been so good! I decided to recreate it at home last night and it turned out so good! Here's what I did....

Cooked the quinoa as directed on the package and set aside to cool

Chopped the kale up in small pieces and threw it in a big bowl. Added halved cherry tomatoes, chopped cucumber, sliced red onion and a little bit of chopped green bell pepper.

Made the vinaigrette by whisking together the juice and zest of a lemon,a sqeeze of dijon mustard, red wine vinigar, some garlic powder, a spoonful of greek yogurt, olive oil and salt and pepper. Poured it on the kale to start "marinating it." Kale can sit with dressing for a while and it's good to let it sit so it can start to break it down and soften it a little.

When I was ready to eat I grilled some shrimp (marinated n lemon and garlic) and tossed those into bowl with kale and veggies and added some feta cheese and tons of fresh mint and basil (most important part!)

It was SO GOOD! Now, only if I knew how to take good food pictures....
