My "Fall Chicken Sausage Sweet Potato Grain Bowl!"

So, recently I heard about this delivery box service called Imperfect Foods, it's a grocery delivery box service..Looked more into it and it's really cool because they take the "imperfect food" that restaurants can't use like miss-shaped sweet potatoes etc and they put it in their boxes at a huge discount to you! I decided to make a "Fall Chicken Sausage Sweet Potato Grain Bowl!" I am horrible with measuring or writing down what I do but here it goes and it's pretty simple.

Cook the farro as directed. I love farro. It's an ancient grain that has a great chew on it and is crazy healthy for you. You could use any grain or wild rice would be great too...or any rice really.

Peel and dice sweet potato into small cubes...like dice. Toss with olive oil immediately as they will start to turn brown. Roast on cookie sheet until barely fork tender and not mushy at like 420. Haha, 420 dudes.

I took the chicken sausage and sliced it in half longways so I could brown more of it. Seared it in a pan on both sides. Set aside. In same pan (with cooked bits of sausage still there) add a little olive oil or I use cooking spray (so it's lighter) and sautee a diced onion and whatever other vegatable you want to use. I just did onion but wished I would have had mushrooms. Once the vegetables are soft add the sweet potato and some minced garlic. Add whatever spices you like. I did a little bit of cumin for warmth, fresh thyme as well as some celery salt and pepper. Add in cooked farro. After it's all cooked together remove from heat and add in freshly grated parmesan cheese. At the very end I tossed a little with some fresh herbs from my little herb garden...parsley and basil.
