I did my best last night to put a spin on leftover night. Since our leftovers were so random and all over the place I tried to play it off to my daughter that we were having a theme dinner of Cuisine From Around The Globe. She wasn't buying it and knew I was just trying to get rid of leftovers. The combo was so random I had to take a picture. We had....Mexican (burrito & quesadilla), Chinese (fried rice), French (green beans) and Irish (mashed potatoes). Nobody was stoked on the combo. But if felt good to get all that old stuff out of the fridge and to not let it go to waste........
